Nutritional value
Yoghurt is nutritionally similar to milk, but because yoghurt is fermented it is more easily digested and can be suitable for lactose- intolerant children. Its high calcium content is very well absorbed. For good bones and teeth, two- to four- year-olds need 400 to 450mg of calcium a day. A small (150g) tub of plain yoghurt contains 225mg of calcium. Yoghurt is also an excellent source of B vitamins.
To make yoghurt
* Yoghurt made by the children first thing in the morning can be ready by mid-afternoon.
* In a wide-mouth vacuum flask, mix a teaspoon or so of plain yoghurt with a little milk taken from a packet of UHT (sterilised) full-fat milk. Heat the remaining milk to 40-45xC. It should feel reasonably hot when tested with your little finger. Whisk in two to three heaped tablespoons of powdered milk, then pour on to the mixture in the flask.
