Bananas are a prime source of potassium, which helps regulate fluids in our bodies. They provide vitamins A, B6, C and folic acid. Their dietary fibre (fructo-oligosaccharides: FOS) encourages healthy gut bacteria, good for children prone to constipation and stomach upsets. Bananas are easily digested and give an excellent, sustained release of energy.

Using bananas Buy in advance and leave at room temperature until they are well-speckled with black, for maximum flavour, energy value and digestibility. Prepare at the last moment to prevent spoiling through oxidation.

* A small banana and a glass of milk makes an excellent, energising snack.
