Ingredients
- 500g tinned or frozen sweetcorn [defrosted]
- 100g spring onion, finely chopped
- 2 eggs
- 120g self-raising flour
- 1/2 tsp chilli powder
- Salt and pepper
- 15g butter
- Sunflower or vegetable oil for frying
Method
* Pour the flour into a large bowl and add the seasoning.
* Melt the butter in a pan and add the spring onion. Cook for five minutes until softened.
* Add the spring onions and sweetcorn to the flour and stir together.
* Separate the eggs and beat the yolks into the flour.
* Whisk the egg whites until stiff and fold into the mixture.
* Place 1-2tbs oil in frying pan over a medium heat. Place 2-3 tbsp of batter in pan in batches and fry for a minute each side or until golden
* Place fritters on a paper lined tray and keep warm while you make the rest
